Think Northern Bee Books have a recipe book with instructions for such stuff!
The Honey Cyser is WICKED... and the Metheglin is surpurb... even when diluted with Absolut Vodka!

Caution will rot your brain and make you want to keep native black bees!
 
Haha, what brain, that went when I carried on beekeeping after I discovered I was allergic to beestings.
 
I have a "Recipes for Prizewinning Wines" book by Bryan Acton which is over 30 years old and which is probably unavailable now. It contains recipes for what you are looking for which I will scan and forward if you wish. I am the Competeition Sec for my local Wine Circle so I know a bit about wines. PM me if interested.
 
CJJ Berry, most brewing and wine forums have a recipe section. 'Goggle' is your friend. Maybe possibly even the search function on this site?(not holding my breath on that one)
 
Made some cyser in july and decided to try it today.

Wow taste is great, but half a litre and im feeling like i have drunk 2 bottles of wine.

think i had better open another one and test its alcohol content tomorrow.
