Electric knife helps people who can't cut straight down as you can concentrate more on the direction without the sawing action.
Also good for very soft freshly baked bread that squashes easily.

As a pup I had a Saturday job in a supermarket (the one where very little helps)
The bread slicer had a set of blunt wires that were reinstalled specifically for us part timers to wreck every loaf that we tried to slice.
The jam pump was also recalibrated to turn a normal doughnut into a treacherous jam bomb.
The oil in the fryers was often left all week to allow a fire alarm test by mid morning.
