Crikey, I wouldn't fancy being the honey judge - or maybe there were several classes of runny honey - difficult to tell. They didn't seem to have any set honey.
 
Michael, what would you guess the really light honey is at 1min 42 secs on the video? I've never seen anything like it!
There are a number of white honeys produced in NA. If I had to guess I would say Black Locust.
A tree that blooms early June. I haven't made much of that honey here, as it always rains the week it blooms.
 
There was a fair bit of set honey there. Probably around 10% compared to runny.

There was also a pressurised honey creamer called creamPAL. A snip at $33000. I want one! Made the smoothest honey I have ever tasted. The consistency of yoghurt!
