I have in the past:

1. made horseradish sauce for beef;
2. made a hot relish / chutney with it (but you don't need much);
3. used it as a chemical weapon (put a big bit through a food processor and let someone else take a good big sniff to see what I mean); and
4. given it to Jewish friends for use at Passover.

You could also grind it up, dye it green and use it as wasabi for sushi, but I've never tried that!
 
Leave it where you found it, bloody awful stuff!
 
sounds daft but what can you do with horseradish, i have loads of it avalible but no idea what to do with it

You can grate it finely and pickle it (put it under a mild liquor). When you want to make up some horseradish, you drain it, rinse it if necessary, and add to cream or mayonnaise. Or you can pound it a bit in a pestle and mortar before combining. Use it like THIS if you like.

You could bottle a load in small jars (save pesto ones, etc), label it up and sell it at fairs. After all, people like horseradish, especially for Christmas, and what could be better than 'organic' horseradish someone can store in the fridge (once opened) and make up as and when they want.

Far better than realising what you have is off or you've run out.And the shop bought stuff is a bit ropey in any case.

Just don't plant any of it, except in a pot, you'll never see the end of it - or is that why you have so much :)

inherited from next doors allotment and from what was on mine before, stupidly i thought i could kill the stuff off and dig it out, roots are like scaffold poles, not really a horse radish sauce man my self, i have never bean able to long term store it past a month as a sauce
 
grate a table spoon full (or get someone else too) and add it too a bottle of vodka for 48 hrs. Drain it off and use the vodka for bloody mary's.
Other method is clean and peel a 2'' piece of root small enough to drop into a bottle, leave it there for as long as the bottle lasts. Use as above or just as shots when you really have had enough and shouldnt be thinking of having another before you go to bed. Good for blocked sinus's I am told..........

Even a small piece of root, if left in the ground will grow into another plant so by trying to dig it out you're probably spreading it - a dab of systemic weedkiller on the leaves is the only way to control it.

peel the roots then blitz in a food processor, add a good bit of white wine vinegar (just enough so it becomes like a very stiff porridge) - keeps in a jar in the fridge for months, I've still got some from before Christmas take some out as you need it, add a spot of mustard powder then mix with cream or creme fraiche et voila horserubbish sauce ten times better than the stuff you get in the shops.
Just beware the fumes (especially when fresh or cooped up in a jar) are lethal :D
 
We usually clean and peel then freeze - take out of the freezer, grate off as much as required then return to freezer. Perhaps not quite as fresh but still tastes pretty good.

It will store quite well in the salad drawer of a fridge if wrapped in aluminium foil –*not cling film. I've had bits last for months in there before.
