Honey instead of sugar in recipes

I want to use honey instead of sugar in a couple of recipes
One is for Marmalade the other for beer
Is there a given formula in cooking i.e a kilo of honey equals a kilo of sugar so that I can just exchange the sugar for honey
Will it work for marmalade and beer the same as sugar
I want a honey taste in both so is it better to just add some honey to taste ,if so should I cut back on the sugar
hope that all makes sense
 
Assume the honey is 20% water and 80% sugar so simply divide the amount of sugar stated in the recipe by 0.8 to get how much honey is required. You probably don't need to worry about the extra water but if it is critical remember for every 1kg of honey added you are also adding 200g of water.
 
also remember when cooking that cakes etc with honey in will take colour/burn quicker than those with normal sugar.

In our country we use 30 kg sugar a year per inhabitant and honey we use 0,5 kg

since getting bees last year i've actually bought more honey (for cooking) than in my previous 41 years put together!!!!
 
choose your recipes carefully! sugar is cheap, and honey is valuable.

only use honey where the recipe really appreciates it
