I have harvested 18kg of honey this week and I'm not in a position to get it all into jars just yet. Will it be OK left alone in a half full plastic bucket ? Worried about it absorbing water.

Fine with the lid on the bucket. Might set and you wil have to warm it up,so as to jar it later .
 
If the bucket isn't full, cover the top of the honey with a layer of cling film and also make sure the lid is on properly.

If the lid seals ok no need to worry. If any of the Honey is Spring honey imho it's better in a bucket than jars as it will probably set rock hard and then you can warm it and make softset.
