Cut comb - how to please

One of the chaps round here who produces cut comb keeps the packed containers in the freezer to slow crystallisation. Opposite to the usual method of clearing honey by warming but he says it works for him.

You can do the same with runny honey in jars. The freezing does not clear the honey but it delays the onset of crystalisation - the honey has to be clear to begin with.

If freezing jars put them in poly bags first so they do not get soaked and the lids rust when they are thawed out.

This is the way I do it but I use art and craft lolly sticks, the wide ones.
