I didn't think that honey freezes solid...it just seems to go really, really gooey.
It doesn't seem to expand at all in a jar.

Dadnlad...I don't think that the 16-18 per cent water component of your honey would freeze...for some reason it doesn't seem to work like that.

Only because he is not posting as much. End of.

An Asian owner of a shop I frequent on a weekly basis, is adamant that all 'honey' contains sugar syrup !

I have given him a jar of my own to try, which he agreed tasted lovely, but how much sugar syrup did I add ?
There appears to be a mindset (from beekeeping practises back in Pakistan) that all honey is adulterated with syrup
I have tried to convince him that we don't do that here, but he is sceptical to say the least

He suggested the best test was that adulterated honey would freeze, but that real honey wouldn't - but the 16-18% water content of mine would surely freeze

I will show him my results from the honey testing scheme, but are there any other ways of convincing this sceptic ?

We sell a lot of honey to a mainly Pakistani community (the Ahmadiyya Muslim Association) with profits to Humanity First (serving all faiths and none)

The hives are on our communities farm in Hampshire and its been very popular (The Holy Qu'ran has many references to Honey -> https://www.reviewofreligions.org/13311/honey-natures-golden-nectar/)

We've educated many of our community by showing them the frames and the process but its more a case of educating them why this pure honey is more expensive than the lidl 'honey' !!

Will be doing the water test in our summer stalls for any resistant folks !

Why put a quote round Lidl honey? Ever tried it?

ha ha ... well I used to use it all the time before I got involved here.

that's the thing see ... looks like honey .. tastes like honey and I was happy paying £1.05

but now I have bee's and see whats actually involved ...no brainer

Mine definitely froze. If you hit it with a spoon it sounded like glass! Maybe different honeys do different things! Worth an experiment!
