Just an fyi only make up a little chunk or as you need. It tends to set a little faster or at least I found it does. I think having the comb triggers it setting quicker than runny on its own.

Thanks I know I’ve found that out much the same I’ve found with buckets of honey with a little wax .
 
I find chunk honey can go very well one one week then not the next. The important thing is to make sure the chunk is large, uniform and fills the jar, otherwise it looks really untidy. It does keep in the freezer.

I agree about having a big piece of comb filling the jar but imo a bit like wonky veg everything still tastes the same and some of my chunk honey comb isn’t uniform which gives it more interest and a not so processed look .
 
I have tried chunk honey in the past and the crystallization is always a problem - the comb disappears into the background of the crystals. Anyone got any tips apart from putting the comb in the jars and storing like that until you need a batch for sale and put in some heated runny honey?

Apart from that I find there is a reluctance to buy it - certainly £8 would be top whack and then what's left crystallises. Have almost decided to just go for cut comb and save all the faff of chunk.

I’ve been v pleased to the reaction I’m getting to my heather cut comb. I only made 6 pieces last year but I’ve gone for it in a big way this year c50% of my heather harvest will be cut comb. Soooooooo easy to prepare compared to extracting heather! Mine isn’t particularly thick comb so need to work on that next season but I’ve been asking for £9 for a piece that’s c 175-200g or 5 pieces per super comb, I’ve sold 25 in the last week at a local show and a talk I was asked to give at a WI.
Whenever I get into selling mode (which I enjoy) I say cut comb is the Rolls Royce of honeys bought by connoisseurs then I offer small tastings of offcuts and that clinches the sale

I’m not sure who the customer is for chunk honey? just not sure what the selling point is for chunk over cut comb? Can the experts who sell it enlighten me pls?
 
It just looks pretty and is often given away as a gift and if left till Christmas looks pretty awful. Perhaps most languish in cupboards for ever

Maybe the opportunity is to prepare it for Xmas sales as a gift? Put the comb in the freezer til then and warm up honey so it doesn’t crystallise and make up just beforehand. What would you charge? I’ve heard beekeepers say the ideal combo is heather chunk in a jar of wildflower / balsam honey….
 
I don't often do it but when I do I it is as you say for Christmas and I charge £8.00 for 12 oz. I only ever do a few jars as it's messy. It's not simply a question of dropping bits of cut up comb in a jar. You have to put a piece of comb in cut well and filling the jar otherwise it looks awful, then you have to carefully clean the neck of the jar where the comb slid in. Having said that a well presented jar with a see through label hits the spot.
 
I agree that it's messy. That's why I like the idea of those jars which are wider at the top. But like the idea of the freezer and making up just before Christmas.
