Quick Honey question

Will the bees make separate honey from different nectar sources?

For example, they're foraging on only apples, then later on, they start on rapeseed. Will they make honey from the apples, then make different honey from the rapeseed? Or will they just mix and match, and the honey contain both?
 
I once had a super with OSR and Hawthorn. The first surrounded the 2nd.

The reason I ask is I have a few patches of darker honey, and it seems thicker. Wasn't sure whether to mix the two, or if one would ruin the other.
 
If the two are on the same frame BB how do you intend on keeping them separate unless you cut them out?
