I've been meaning to dig some up as well (with permission!) - but a beekeeper who first showed me the importance of butterburs as an early forage for bees (as in, lots of bees happily busy on the flowers) told me to wait until the flowering is over, and then dig them up.

The place i got my from has a huge covering of them..some where in flower and some where not..i dug the smaller none flower ones up and they have more than doubled in size in just over a month in the greenhouse.
