Overheated soft set

If soft set honey is overheated to about 50 degrees, does it just resort back to ‘runny honey’. It was left on the heat too long at around 45-50 degrees unfortunately.

How long was it heated for ? It would take quite some time to increase the HMF at 50degrees.

Yes but it’s still ok, just runny.

and it will set again

so it would set again as ‘soft set’ with tiny crystals?…or just crystalise as normal honey

Normal honey if there are no original crystals present but if there are then you'll get soft set again

It would set with it’s natural crystal size (whatever that is) or tiny crystals if you seed it with soft set starter.

It was probably overheating for 2-3 hours.

that's nothing - not even worth including it in the equation

Legal limit I think is 40 ppm
