If you're well funded: Plants for Bees. Kirk & Howes. IBRA. 2012. £25 when I bought it. Well reviewed. 220 pages on various bee plants.

The book suggested by Amari is v good and separates honeybees from other types of bees and where they forage. These 2 books are also v good:
Plants & Honeybees their relationships Aston & Bucknall. Covers a lot about plant biology and pollination as well as favourite plants of the honeybee

Plants & Beekeeping by FN Howes. Covers the major plants foraged by honeybees, the sort of honey produced from their nectar

There’s also the IBRA directory of important honey sources.

I'm still using a 40-year old copy of Howes' Plants and Beekeeping, the most useful book in my collection of bee books. Worth seeking out at secondhand book shops.
AbeBooks sell print on demand copies at high prices.

You can get a kindle version for a fiver from Amazon, or paperback for similar.
