Be honest... You'd used the pan for beetroot beforehand and didn't wash it out properly, didn't you? :D

How very dare you!! Suggesting I don't wash my equipment! I've even replaced my inherited aluminium maslin pan (Alzheimers here I come) with a stainless one. :LOL:

Don't know what happens but boil it for 30 odd mins to setting point and . . . . .

This year I got a lot of foam. Maybe temperature too high. Skimmed it off and jarred it.
My marmalade is dark and does have a caramel/tobacco/molasses taste but I like it. I may try half sugar/half honey. (But then I'll have to buy the sugar!!)

Put a knob of butter in the pan when you take it off the hob ,stir it around until it dissolves and the foam will be gone .
