The bucket should be waterproof.
There shouldn't be steam at ~40C
A well-fitted bucket lid should minimise water vapour getting in.

Control the temperature carefully. It needs to stay at 45C or below. And be kept thereabouts for 24 hours at least.
Don't feel you have to open the bucket every few hours for a look.
But by all means take it out, dry it off, open it and give it a bit of a stir occasionally. Once every 12 hours should allow you to see how it is going and gently help it along.

I would have thought a lot of stirring rather than a bit.
 
Thanks for both replies. Only a little crystalisation in bottom of bucket (so far) so hopefully not too much stirring. But I have only looked in one bucket. Might be a week or two before I get to trying this for real. Thanks again.
