PTFE tape .. good call !

Yep ... food safe... what do you think non stick pans are coated with ... Teflon is a hard derivative of polytetrafluoroethylene. We used to use PTFE tape on all the pipe joints in Bassetts sweet factory ... no liquid sugar leaks there.
 
i've had trouble with the tap and seal on my spinner and honey buckets

have others had this and got any tips?

White or clear silicon seal between the outside of the bucket and the mating face of the tap. Don't blather it on the threads or the inside of the bucket. Allow to cure completely before putting into use or the smell of vinegar could be a problem.
Dow Corning is best as some of the other brands are quite frankly rubbish.

The Chinese taps at £1.99 each need the O ring on the inside, trust me. I've got nigh on 100 buckets with taps in storage and without the internal ring some leaked.
Wouldn't risk it without the internal ring.
