I have been asked if during storage of honey either in buckets or jars does this effect the colour at all? if one keeps a couple of jars of honey a few years would the honey darken?

Nope. The crystallized honey is usually more lighter in colour and returns its original collour if decrystallized. It can darken when overheated, which is common for all sugars.
 
Yes,darkens through heating, and to a much lesser extent through storage also.
