Heather honey

We are finally trying a second attempt at extracting our first honey crop. Now that we have acquired the press.

The refractometre reading from samples before pressing is now 20.2 % /21.2.
We are going ahead and pressing as the boxes have been kept in our utility room which is getting colder and damper by the day.

Is there any way of reducing the water content without a warming cabinet.

A dehumifier in a small room with the supers(before extracting) in worked ok for me, with liquid honey though, not heather.

doesn't heather honey have naturally higher watar content anyway?, your figures looked low to me for heather!

Legally you are allowed up to 23 % for heather. ,

Yes you are, but its not really completely stable like that. We have never produced heather honey with a water content much over 19% and ths year itas about 17.5 to 18............however, the level described by OP will be OK, and may actually reduce in the processing.
