for a vacuum seal?

we had our first crop last year and it didn't form a natural vacuum which you usually get from sterilizing jars for jam etc and bottling hot

a few people were surprised the honey didn't

should it?
 
honey is not hot when it goes into the jar and the jar should not be hot therefore there is no vacuum when it cools. As long as the lid seals properly to stop the ingression of water from the air then it will be fine.
 
It is a concentrated sugar solution and will kill any bacteria that get into it, by essentially sucking all of the water out of the bacteria through it's cell membrane.
It's why the bees concentrate the nectar into honey.
