Could you do this with mead? Or is it too high in alcohol already?

Potentially ... the ABV (Alcohol By Volume) where it becomes more difficult to freeze off the water with domestic refrigeration is about 20% so it's unlikely that your mead will have achieved that level of alcohol ...

vacuum distillation where the alcohol boils at close to room temperature and is recovered in a chilled condenser is another method you cant use
