Can set OSR ferment?

opened a 15lb bucket of set OSR to bottle, and found the lid distended. the top of the bucket had an inch of crusty honey and when i melted some in the microwave had some lovely clear tasting honey, with a froth on top....
i think its fermented but im surprised that this has happened after it had crystallised.
its a lot of honey to turn to mead. anything else i can do with it?

Don't be suprised. This can happen if the water content was too high and the honey set will then feel wet on top.It will still set. That's why it's best to measure water content rather than rely on the shake test.

I had some osr ferment. And i did the shake test. Next year im not taking any off until its been capped , or very nearly
 
of course it can if you included uncapped.

key will be to get ratio of capped and uncapped right such that final water content is OK.

obviously as it sets the remainder will be higher water content.

Feed it back in feb and march (instead of buying fondant) as long as you are sure its not a disease risk.

80%??? And fill buckets to the brim.
Three sorts of fermentation - only one goes down the bucket, other two superficial?
 
When honey crystallises ,the liquid in between the crystal is a weak sugar solution so provides an ideal medium for yeasts to flourish,

Agree. Set honey can be more likely to ferment than runny. This can happen even if the liquid honey measures less that 20% water.

Well, I would likely feed it back during a foraging gap, not that early in the season
