Looks like I'm going to have some left over.
What are the thoughts about what to do with it.
 
wrap it up so that it's sealed and either shove it in a cool cupboard or in the freezer
 
I heat mine in a pan with water, dilute it and feed as 1:1 syrup.

A combination of Taff and PHs replies.

If it has already been on a hive I melt and use at a replacement ratio 0f 1.1 to every 1Kg of sugar I would have used to make syrup.

If its not been on a hive it gets wrapped very securely and simply stored in the garage till next winter. The first 10Kg of fondant that went on this year was originally made April 09. It was fine. R
