Harry Riches 'Medical Aspects of Beekeeping' (2000) is a good read. Covers the whole area. He finishes with 'The single most important fact to remember if you wish to enjoy the craft is to keep docile bees.'
 
If, at this time of year they are out flying, is there such a thing as docile bees?

To keep you going Yes you get the odd docile bee warming up on the front of the hive in the sun, but generally NO.

Edit to add. i did not know your meaning but you can get docile quiet bees if you get the right Queens from reputably good stock
