250ml honey
250ml of tepid water
1/2 nutmeg
1 cinnamon stick
2 allspice berries
1/2 tsp ground ginger
1 vanilla pod
orange peel, of half an orange, dried out
70ml of vodka circa 40%
unsalted butter, (optional)

Mix the honey and tepid water in a good quality steel saucepan, and add the spices and orange peel. Heat gently until boiling, then simmer for 5 minutes. Skim off any foam. Remove from the heat and leave to cool.

Once cool add the vodka, mix and cover. Leave to infuse overnight for greater depth of flavour.

Strain through muslin and pour into a bottle. Store in a cool, dark place for 2–3 days. Strain again through a muslin and transfer to a fresh bottle

Optional to serve, heat gently, and add a little knob of butter to each glass.

To be enjoyed on long cold evenings preferrably by an open fire with friends
