Nectar filled cells but not many capped

Hello all,
In my first full year as a beekeeper. Managed to create an artificial swarm in May and had approx 15lb of honey with no granulation, despite being surrounded ny OSR!

They seem to be bringing in quite a lot of nectar and pollen at the moment. I have 3 supers on (one of which is to give them more room than anything else)
The top super is well filled with nectar but as yet very few cells are capped.

Question,
How long can/do bees leave cells uncapped?
Obviously the moisture content needs to be right before they cap, but I read so much about how close we are to August and the need to prepare for winter!
Should I leave the 3rd undrawn super on for much longer?

it certainly helps to know that they WILL cap it at some point!

Hopefully, but never certain where bees and the UK weather are concerned!
