Also known as pasteurisation I guess..I say again, just because your honey is .... Damp...doesn't mean it ...will....ferment. it is luck of the draw. You just have to keep an eye on it!
I haven't done it but I believe you can heat it for a short time to a certain temperature to kill the yeasts and that also will stop fermentation.
