Jezd, it was already fairly set after 12 hours and after about 48 hours you could turn a jar upside down and nothing came out. It has continued to crystalise further and is now probably as set as it is going to go - about a week.
If you want to cheat, forget grinding up coarse crystalised honey, instead add a couple of spoonfuls of powdered glucose, bought from a home brew supplier, to about 3 pounds of liquid honey. After 12 hours it will have set solid and can be warmed a bit and added to a 30 pound bucket. I am not sure if trading standards could detect the added glucose but it would be a big risk trying, but for your own consumption this trick works very well as the powdered glucose of very fine and produces excellent set honey.
