Grate some nutmeg into a toddy glass or mug, sprinkle some ground cinnamon, and dump about a level teaspoonful of unsalted butter onto it.

Add a spoonful of dark honey and a good slosh of rum - Morgan's Spiced if you like the vanilla flavour, a darker rum if you prefer a more "burnt sugar" flavour.

Also add a glug of apple juice if you like, but it's not vital.

Top up with hot water, stirring vigorously to mix in the butter (like a warm, spicy version of a vinaigrette!). A cinnamon stick makes a good stirrer!

:pResult: a lovely, warm, comforting drink that smells like apple pie and tastes gorgeous! Not excessively alchoholic - unless you really let your hand slip on the rum (which, mysteriously, I always do:rolleyes:)

Alternatives: palm sugar or maple syrup instead of honey;
top up with hot apple juice rather than hot water;
Use hot cider instead of rum, making hot buttered cider instead;
Use a dark rum, with lime and grated ginger root instead of the cinnamon and nutmeg.

I had hot buttered rum in the rum-doodle bar in Kathmandu. Surrounded by memorabilia of every climber of Everest (who could be bothered, and gain access), including Hilary and Tensing.

Quite a memory, thank you for bringing it back.
