Make as normal substituting half the sugar with honey.
For an extra honey taste add a teaspoon to each jar before closing.
 
When I make gooseberry jam I pick the fruit before they are fully ripe. They have more flavour then and I think make better jam. (Also if you add balsamic vinegar to gooseberry jam then you have a great sauce to go with mackerel.)
