Why won't my honey crystallize?

I’d like to try making a soft set honey. My spring honey is mainly from trees, summer honey is wildflowers and balsam and in certain apiaries heather. Which in your opinion would be best to try a soft set honey with? A beekeeping friend who lives near OSR could give me some honey to seed with.
I normally had plenty of rape so little need for a seed as such, but when bulking out I used lighter colour spring honey. My summer honey is in general dark from chestnut and slow setting. I liked to keep as much colour contrast as possible between the whiteish set and summer runny.
 
Soft set heather honey is very well received by the public and it was my main way of presenting it. Further is gives the product a better shelf life in terms of appearance.

Update on the seeded bucket. I applied the drill this afternoon and rather than the paddle moving the honey the bucket turned. Possibly ready to jar then!

Ok thanks, think I’ll stick to runny honey, as my spring honey is darker from trees rather than light in colour
