Hi, I took an early summer (July) crop from a few of my hives to supplement stocks before the main crop I've just taken. Two of the buckets from the early crop had set pretty solid so I popped them in the warming cabinet to get them pourable and it took several days until they softened enough. When I looked before starting the pour I realised that the top inch or so of honey was a very thick, cream colour with a lovely soft flavour. The stuff underneath was a much less inspiring muddy colour but that's not unusual for this area at that time of year. I'm guessing the creamy stuff is a specific low density honey, any ideas what it might be from?
