Set honey?

I'm trying to understand how to deal with a crop of honey. My first crop was 2010 and was very light and did not set, it was extracted, filtered and bottled the same day. Last year I left it a day before bottling and a couple of months later it had set. Is set honey set, and warmed for bottling purposes and then sets again in the jar or does warming it change it's properties?
 
Warming delays it , so once in the jar as liquid it will remain this way for some weeks, temp dependant .
Most honeys will granulate again in the jar but hopefully by then you have sold it/used it .
If you want to have 'set' honey , extract , filter and jar it up .
