Hi, all season I've been collecting pollen from the inspection trays, I've put it in the freezer, could I use it as patty's or even stuff it in to partly filled honey frames I'm storing , in the thought of feeding it back to the bee's at some point.

It's fine to feed back, It's only pollen that has dropped through the mesh floor so not contaminated with anything.
How you would feed it back is the interesting question.

Indeed patty's?. Or putting it into frames that I have part filled with honey , it would be a faff . But maybe worth it .

You can feed pollen on a small piece of card laid (e.g. filing index card) on the top bars of frames. Not all colonies take it like this, though whether that's due to them not needing it or something else I have no idea. In pollen-poor apiaries I've done this early season for several years.

Late winter when there stores would be low that's what I was thinking?

Remember that the stuff on the tray will be damp. It needs to be dried to stop it going mouldy between now and when you want to use it. It would need to be a significant amount to make this worthwhile ... I feed about a heaped tablespoon.

Could you roll it into fondant and feed back to them?

Simply store in freezer till needed in box or jars

I've put mine in the freezer, the pollen I've collected was fresh daily and it did go in to a paste if worked in your fingers. Perhaps it would be best to store dry?. I've a 1lb jar full so far . I'm going to try some patties with it.
