It seems that SOME bees........ in Australia for sure ...... cap high water content honey for some reason. Does it matter? Probably not.
We should all be taking refractometer readings of our honey at some stage before sale. anyway, surely?
Well, if you test it before you extract it, all is not lost if you have a dehumidifier, as the legendary Carl Killion found out in 1949. World record holder for honeycomb production and ran 1000 hives. He got capped honey water down from 21% to the magic 17.1% (no risk of fermentation)..see post by Michael Bush in the link below. If you test it after extraction....well, perhaps more difficult to deal with to get the water out if it is too wet.
