Hello. I have just been reading up on honeydew. There is information about European Honey dew and the honey it produces but I cant find any reliable information about UK honey dew. I take it that's because it's not a reliable source of forage for UK honeybees.

How common is Honeydew Honey in the UK?
What plants produce honeydew in the UK?

Do people have any experience in harvesting any honeydew honey?
 
My apiary is in the mini 'orchard' area of our garden, surrounded by cherry, plum, pear and apple trees. I often see bees on the cherry trees, after the honeydew. I don't know how reliable a source of forage it is, and therefore whether it would ever make up enough of the proportion of forage to enable you to declare the source of your honey to be 'Honeydew', but they certainly make use of it.
As an aside, although the plum trees are also covered in aphids, my bees don't seem bothered by the plums.

I do believe the main source of honeydew in this country may be Lime, but the bees only go for it in a dearth.
