My understanding is that putting honey in the freezer will slow crystallization, but once out of the freezer, is crystallization quicker so that the "freezing" was sort of pointless?

I think people generally tend to freeze cut comb honey. They then take it out to sell quickly. Once the customer has it ,it doesn't last long enough to crystalise before it's eaten :drool5:
 
I tried it this year. It stops runny honey from crystallising but it crystallises in about the same time as it originally would have done once removed. The only thing I noted was the crystals seemed to be loads smaller and smoother.may have been a one off. More experiments this year!

Putting honey in the freezer will stop granulation not just slow it. Once out and warmed up as far as I am concerned it will take as long as it would have previously, I just wouldn’t put it in a cold garage/building and let it defrost for a week as am sure that would help speed up the natural process.

Generally to confirm there are no live wax moth eggs/larvae.... yum!
