I have a 5 kg bucket of osr honey from earlier in the season. Refractometer tells me that this is 18 per cent water.

I now also have a 10 kg bucket of mixed summer honey, the refractometer tells me that this is 21 per cent water.

In order to produce something that is below the necessary 20 per cent magic figure Should I just liquefy the osr and blend it vigorously with the summer honey and let it cool in the shed?

I am hoping that the end result is a soft set honey that will not ferment?

As it is quite a small quantity, I'd be inclined to jar the 10kg for immediate use. Just wondering what the comb was like, fully capped?

I agree, use the higher percentage first! I will probably regret saying this but I have never had honey ferment yet! It probably never lasts long enough. Only got a refractometer last year, I think we can get too hung up on water percentages!
