Home made fondant- either Gels or hard crystal ?

hi
tried twice now making fondant , but either get a thick clear Gel or a hard clear Crystal , never get the white thick consistency of
purchased stuff.

Any advice or a good recipe?

Invest in a sugar thermometer such as a Tala 3 parts sugar dissolved into one part water Teaspoon of white vinegar
Heat to 235 c
Allow to cool to 200c
Electric whisk until opaque
Transfer into chosen recepticle pdq

Unless you're only feeding a couple of hives or you're really short of something to do then buying bakers fondant is a lot cheaper especially if you factor in your time.

There's a lot to be said for recreational masochism though- dealing with the culinary version of napalm really helps along the day.

Hej,this is how we do it.For starters,in spring,as soon as we see enough fresh pollen and nectar starts coming in,first harvest pre-preparation, we take out all left over winterfood.That gets swung and kept aside.Mid august we prepare our paste by mixing starchfree powdered sugar with this kept aside former winterfood in a kitchenrobot dough maker,too dry,add drip wise some water untill satisfied,works every time.

That is cool, do you have an indicator on how thick you need it to be? I would worry that in the winter the warmth of the cluster would melt it if not done right.

We start giving them this mid august until first week of september,all they want and use up.Than,mid october the hives getting weighted and if needed get feeded some more fluid sugar solution untill the weight is right,one of our two lvl's nucs for instance needs to weight 22 to 24 kg.We know the ideal weight for each of our hive sizes,best to call that experience.But there doesn't stay any unused paste or sugarfluid available,if the weight of the hive is right they've plenty stored in their frames to make it through the winter,so the worries you have don't apply.Our dough we make till it's still malleable but not sticky.
