what time/temperature are people using as the optimal to reduce HMF when liquifying honey that is set in a bucket?

The legal limit for HMF is 80mg/Kg.
From the hive and the honey bee:-
To attain 30mg/Kg of HMF at 40 degrees takes 20-50 days.
At 50C 4.5-9 days.
Nothing to worry about when jarring up then.

The (UK) legal limit for HMF in Honey is 40mg/Kg as per Schedule 1 Criteria 6 b(i) of the Honey Regulations (devolved equivalents apply in Scotland and Wales)
Honey with a "declared origin from a tropical climate", and blends including such honeys, has a separate higher limit of 80mg/Kg in the UK (this was formerly a derogation from the EU limit of 40, and was I understand the only derogation above 40mg/Kg in the EU when the UK was a member) but that won't apply to UK beekeepers storing/processing/selling their own honey.
There is no limit on HMF in honey sold as Baker's Honey.

Thanks mdotb. Sorry i posted misinformation. My point was that in our normal processing we do not have to worry about HMF. I keep temp and time as low and short as possible to do the job though.
