Fondant expiry

As the title suggests, is there a time when bakers fondant is no good even if it is still moist?

Finished my block of three year old fondant off this year. Was still good and pliable and the bees have eaten it no problem.
 
I have fed 7 year old and it was fine, not an issue.

I have resurrected 3 year old fondant which was bone hard (by spraying lightly with water and wrapping in film and leaving a week) and teh bees ate it all.

Tasted OK to me...
 
When it starts to ferment?

Sell-by dates in general? ? ? ?
Sugar is often used as a preservative, work it out!
