Nearing December, here my honey Marzipan.

Buy 500 gr of almonds, put them in boiling water for a few minutes, peel the almonds.
Let them cool, ground them in a mortar or use a mixer (pulse only) to chop them into rough almonds powder.
Add 300 gr of powder sugar and a little almond extract (optional)

Mix by hand and add slowly liquid honey. Work it till you have a dough. Consistency should be malleable but not too soft

Roll small balls, drop them in (belgian) chocolate flakes or cacao. Shake gently.

Keep marzipan in fridge.

Serve with fresh glass of dry white wine.

Brilliant - just what I need for next year's Christmas presents for the family from my bees. I was afraid it was going to have to be candles ...... again!
