I've just come back from Spain, I came across 2 different markets in different locations and found beekeeper selling honey of all kinds. But what worried me was the cut comb honey, they're selling it uncapped :nono: small chunks for about 3-5€
Makes you wonder about the jar honey and water content.
 
Bees find it easier to ripen honey in drier climates.
 
That it's uncapped doesn't necessarily mean it's unripe. However, I'd expect anything for sale to be correct, i.e. with full cappings.
 
"Correct" ah now there is a real can of worms.

Because it is right to our eyes is it only right for us? Might it be that for that society it is also right and who is right then? Not us I politely suggest.
