Hello folks,

Haughton Honey are actively looking for recipes that include honey in them (even if it's just a teaspoon!) to expand our collection on the web site and any that are used after being submitted will be FULLY credited to you.

Honey Pear & Dill Baked Carp

Carp is a favoured food fish in some European countries.
Here is a recipe that I tried and enjoyed given to me by some students we had to stay last summer from one of the Baltic states.
I did not dare ask from whence they obtained the carp!

Take one 10 # 15 lb carp.
Remove scales, gut, and fill cavity with a good handful of fresh dill, crushed mustard seed and crushed peppercorns.
Prepare a large dish into which whole carp is placed,
Marinade in cider vinegar, a good handful of sea salt and a sliced whole onion.
Place in refrigerator overnight.

Remove carp from marinade, discard dill etc but retain sliced onion.
Rub a good handful of sea salt, fresh mustard and about 8oz of honey all over fish.
Place two to three cloves of garlic, a sprinkle of nutmeg and fresh coriander plus the onion into the cavity. Arrange slices of pear on top op the fish, and drizzle on more honey.
Smother with about 8 oz of melted butter, and place in hot oven for about 30 - 45 minutes until crisp and golden brown. ( Top oven on our AGA)
Fish can be covered with cooking foil, but foil removed later to give fish a golden crispy finish.

Once baked allow to rest for about 5 minutes
We had it served with boiled new potatoes, and a radish and beetroot and chopped raw onion salad. with a fresh mayonnaise
The flesh falls off the bone.

Delicious!!

As an alternative Pollock can be substituted for the Carp if you feel that eating giant goldfish is not acceptable!
