Sun flower honey!

I am led to believe that sun flower Honey sets at super speeds !
I have some honey which you can almost watch setting !
Having set it has attained a buttercup yellow colour .
Any ideas .

Could it be Ragwort?
I don’t know if that sets quickly though
I have bought sunflower honey abroad and it’s not bright yellow.

Up rooting ragwort has been neglected a little in these parts of late .
The honey off same has a peculiar smell and off taste which is supposed to mellow with storage ?
White clover has been cropping well , with suitably short florets in this drought ?
