Hi,
When I combined two hives last week I had to remove some honey.
I ended up with ten jars (my first ever).
Now I know its exciting to have your first honey but it really tastes strongly of flowers. It reminds me of how hawthorne or elderflower smells. We have a lot of hawthorne and blackthorn around our area. The honey is a light orange colour, though not translucent as only strained through some tights.
It has cost me about £200 per jar to produce. :thanks:
 
I understand that hawthorn honey is quite dark.
I took some frames off earlier in the year to make room and the honey is similar to your description. The only thing it could be at that time of year is willow.
 
I love early honey and am hoping to get my first in a few years. Mine comes from hawthorn and dandelion along with a few other wild/garden flowers. Delicious:drool5:
 
My spring honey was very low % water - 16-17 - from what was mostly uncapped frames. 120lb in total that is now in buckets. Somewhat unpleasant smell so dandelion I think. After about a week the odour has ameliorated and it has solidified. Out of 10 colonies I have 5 that look well positioned for the main flow - not bad from having 4 colonies at the start of April.
