How to tell if honey is fermenting....

What are the early signs of honey that's fermenting or going to ferment?

Smell, bubbles etc.... I don't have any but was just curious

Just shake out some from uncapped into a clear glass jar
sealed off with waxed kitchen paper and a rubber band.
Place on window sill - wait.

Not sure if this is of any use but this is from a bucket that fermented ..it separated and shot up to 23% moisture after it was creamed..air bubbles may have caused it but unsure..I can only describe the smell as a mild apple cider vinegar aroma.

I find there's a distinctive aroma - acidic or cidery as Millet says. If it's in a jar and there's an audible hiss on opening that's a very good sign you're too late... (sugar -> alcohol + CO2)

In old frames, the cells go kind of bubbly, and they stink again.
