Hmmm, maybe you're right. It wasn't 'in use' while the honey was exposed to the air.
I'm not planning on selling any of my 4-jar harvest though, so I guess it doesn't matter this time.
My thinking was: find somewhere that has a shiny floor, and that can be closed off to the outside world to stop bees/wasps coming in when the honey is exposed. My kitchen has a stone floor and is too busy to close up for that long.
