can you use any wood to make an eke ( just thought i would ask before i make a couple)

Anything you can lay your hands on.

I've used roofing battens, and they are just as good as cedar ones!

Yes, but. (Its beekeeping, remember?)

Most ekes are only stuck in for some temporary purpose, and don't have to be spectacularly long-lived. So, most people don't invest heavily in the materials!
One exception would be a conversion eke, (like a National to 14x12), which being in place for the long term, would justify similarly good material as the original hive parts.

I use sapele

Disagree. Sapele is a bit posh. You can use anything that is cheap as it isn't used all the time anyway. 18mm thick sides and as deep as you think appropriate for whatever you think it will be used for. I've made some that are about 1 1/2" deep nailed to a crownboard. Just right when feeding fondant

Probably a good idea to make sure that any wood you use has not been pressure treated.
