I've removed all my supers ready to extract honey and treat for varrao using Apivar strips.
Can I overwinter on a single brood and place a slab of fondant in an eke?

If so, would fondant sit directly on top of the frames or above crownboard?

Is the fondant instead of syrup or as well as?

if you have feed sufficient syrup, you shouldn't need any fondant - apart from maybe an 'emergency topup' in the New Year.
Although some beekeepers feed fondant instead of syrup
 
I was planning on giving some syrup and then placing fondant if they require.
Then feed so that they have 40lb of stores. Then gave fondant handy fir February time
I still weigh my hives to see how much each colony needs then heft through the winter.
Luggage scales each side of the hive. Lift a cm or so and add both sides.
