just watched pete`s nuc box video made with 12 mm ply, would this be suitable to overwinter a nuc or would 18 mm be better suited? thanks in advance
 
Carefully covered with expanded polystyrene sheet or other insulation, it could just as well be in 4mm!

Some will say 'no problem', others might hedge their bets. I say: depends on colony, weather and other protection.

agree that flat poly sheet panel, top and side would posible to overwinter but i would cut three holes in the floor 3" at least and cover with OMF flooring, not for varroa but for ventilation

Not necessarily relevant to your question, but when you start making hive items out of 18mm ply they start to become fairly heavy. Hot air rises, so in terms of insulation what you have above the crownboard is more relevant IMHO.
 
I overwintered nucs in 12mm ply boxes last winter (snow and all) no insulation just very big colonies of bees with comb built in the 4 inch roof spacer put there for feeder space
